Thai Inspired Mango Salsa
Juicy but not overpoweringly sweet, mangoes are incredibly versatile fruit that can be used both in sweet & savoury dishes. This mango salsa is a delicious summer flavour hit that can be served with grilled fish, chicken, tacos or even on it’s own!
Thai Inspired Mango Salsa
2tsp Fish Sauce
1½ tbs Olive Oil
2 Spring Onions, finely sliced
1 Mango, flesh diced
1 Red Chilli, finely diced
1 handful of fresh Coriander, roughly chopped
In a medium sized bowl, whisk together the fish sauce and olive oil.
Add all the remaining ingredients and stir thoroughly till well combined. Set aside for an hour to allow the flavours to develop.
